Work Completed At Micro Distillery

Construction work has been completed at a gin distillery in Caithness, the most northerly distillery in mainland Britain.

Dunnet Bay Distillers, which is run by husband and wife team Martin and Claire Murray, custom-built the facility, and the first batches of Rock Rose gin have already been distilled and tested.

Full production of the new micro distillery is expected to start in time for the official opening on 21 August.

Over the next three years, the firm will receive support of £83,990 from the Highlands and Islands Enterprise (HIE).

Mrs Murray has been working alongside experts in Caithness to research local botanicals which can be used to flavour the gin the distillery will produce, while her husband works in the oil and gas industry in Aberdeen and is currently studying for a PhD in brewing and distillation at Heriot Watt University.
